Requirements
- Culinary degree from an accredited school is preferred.
- Minimum 4 years in the industry and 2 of those years in some form of fine dining with a medium to high volume.
- Prior management experience is preferred but not mandatory.
- Must show progression in position with prior jobs.
- This is a full time position with the hours varying from day to day. Flexibility to cover any and all shifts is necessary to fulfill requirements.
Expectations
- Applicant must have a true passion for cooking, ingredients, and respect for the industry as a whole.
- Applicant should have a strong base in traditional cooking techniques as well as an interest in modern techniques.
- Applicant must possess the knowledge to make basic sauces, stocks, ect.. without a recipe or instruction. (Example béchamel, hollandaise, chicken stock, veal stock)
- Applicant must be comfortable managing other employees and reprimanding if necessary. The sous chef needs to lead by example to uphold the standards set forth by the restaurant and chef.
- Applicant should be adept with a knife and have a basic knowledge of butchering meats and whole fish.
- Applicant must understand all of Florida state health department codes and must be servsafe certified. (We provide that if needed)
- Applicant must understand ordering to keep pars and FIFO rotation of food as the orders come in.

This is one of the key positions in the restaurant that makes this team successful. We strive to preform at a high level 7 days a week. On chef's days off, the expectations are just as high if not higher from our customers and owners. We use some of the best ingredients paired with modern and classical techniques that create an environment that promotes learning and positive pressure. We need to make sure that consistency is throughout the kitchen everyday. The sous chef is the support system to help maintain our success as a restaurant.

Pay: $50,935.00 - $55,141.00 per year
