Job Title: Pastry Production Assistant Manager
Job Purpose: Responsible for assisting in coordination and management of the pastry kitchen department. Responsibilities include: Leadership, profitability, research, menu development, service, quality, purchases, preparation and production of food items.
Brief Job Task and Responsibilities Overview
· Assists in leading 15-25 employees
· Leads by example, nurtures team concept and promotes Cossetta company culture at all time
· Assists in the assessment of employees including obtaining restaurant supervisors input, drafting and conducting performance evaluations
· Assists in recruiting, interviewing, and providing primary recommendations on kitchen staff
· Demonstrates initiative and performs all activities as business deems necessary.
· Provides and requires from all Cossetta employees a world class level of customer service and satisfaction.
· Monitors and ensures all recipe ingredients meet quality standards for all menu items
· Directs and monitors Pasticceria food and beverage preparation and merchandising to maintain consistent quality and standards
· Responds to and promptly resolves all customer concerns or issues.
· Recommends monitors and controls departmental expenses.
· Recommends potential new products and menu development
· Performs Monthly physical inventory
· Monitors departmental vendors for service, product quality and competitive pricing.
· Places and receives orders
· Establishes and maintains frequent, timely and constructive communication with all employees, departments and management.
Preferred Qualifications
· Management experience necessary
· Knowledge of food cost and purchasing.
· Proven leader in development of employees.
· Have strong organizational skills.
· Flexible schedule (ability to open or close kitchen).
· Knowledge working with chocolate, sugar, pastry, and bread items.
· Culinary or College degree a plus.
