Neillsville Retirement Community is in search of a reliable, experienced, and capable Dietary Manager to lead our dietary department team. This position is full-time with great starting wage and benefits including health, dental, vision, PTO and holiday off pay, EAP, and employer paid $10,000.00 life insurance policy.
Job Summary
A Dietary Director oversees the entire Dietary Department to ensure the nutritional food requirements of the tenants is met, as well as standards of cleanliness and food preparation required by State and Federal laws are met. The Dietary Director is also responsible for meeting the Company food budget on a monthly and yearly basis, as well as creating menus that correspond with Company food budget requirements. Specific job tasks for this position may be further detailed in a daily task statement, which is considered part of this job description.
Tasks
- Cook foodstuffs according to menus, recipes, special dietary or nutritional restrictions, and numbers of portions to be served.
- Test cooked food by tasting and smelling it to ensure palatability and flavor conformity.
- Apportion and serves food to facility tenants, employees, or patrons.
- Monitor food preparation methods, portion sizes, garnishing, and presentation of food to ensure that food is prepared and presented in an acceptable manner.
- Schedule, order, and receive food and beverage deliveries, checking delivery contents to verify product quality and quantity.
- Monitor budgets to ensure that expenditures are authorized and within budgeted means.
- Schedule staff hours and assign duties.
- Monitor compliance with health and fire regulations regarding food preparation and serving as well as conditions in dining facilities.
- Train new employees in food service department.
- Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation and presentation.
- Keep records required by government agencies regarding sanitation and food subsidies when appropriate.
- Keep copies of menus and/or daily records of meals served for licensure review.
- Records, maintains, and submits monthly food inventory to home office in a timely manner.
- Cleans, washes, and sanitizes food preparation utensils, equipment, and working areas including floors.
- Ensures all equipment is in proper functioning order and temperatures and that monthly cleaning and maintenance of such equipment is performed.
- Removes garbage and recyclables from residence daily.
Knowledge
- Food Production – Knowledge of techniques and equipment used for the consumption and cooking of foodstuffs as well as storage/handling techniques.
- Mathematics – Knowledge of arithmetic in order to properly follow menus, recipes, and apportion food.
- Customer and Personal Service – Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.
- Administration and Management – Knowledge of business and management principles involved in strategic planning, resource allocation, leadership techniques, production methods, and coordination of people and resources.
- Production and Processing – Knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of goods.
- Clerical – Knowledge of administrative clerical procedures and systems such as word processing, spreadsheets, managing files, and records, and other office procedures.
- Public Safety and Security – Knowledge of relevant equipment, policies, procedures, and strategies to promote effective local, state, or national security operations for the protection of people, data, property, and institutions.
Qualifications
- High School Diploma or equivalent is required.
- Previous work-related skill, knowledge, or experience is required.
- Must be able to meet the physical demands of the position listed above including the ability to lift and carry up to 25 pounds, walking, stooping, squatting, reaching, pushing, and pulling.
