General Summary:

Responsible for the day-to-day oversight of the concession operation; its offering, budget, staffing, service levels and its overall success. Works to provide creative concepts and concessions themes to increase sales as well as meeting/exceeding the national standards and responsibility. Manages daytime stock team where duties include implementation and execution of HAACCP procedures, inventory control, concession stand replenishment and equipment maintenance. Responsible to oversee all concession stand leads and onboarding process for all new hires which includes training, event specifics, progressive coaching, and continuing education.

Job Duties:

· Demonstrates and embodies the PMI Entertainment Group Culture and Customer Service values.

· Sets staff service standards and conducts hourly staff training. Disciplines as needed.

· Research industry trends and recommends conceptual and concession themes that will increase sales.

· Works closely with Finance department on accounts payables, payroll, and invoice coding to ensure accurate reporting and end-of-month data.

· Enforces all cash handling and security policies.

· Responsible for event budgeting, ensuring goals are met, and overages are reported.

· Makes recommendations for improvements or efficiencies based upon this data to meet and exceed the national standard for concession profitability.

· Assists Vice President of Food & Beverage to fulfill all concession partner relationships.

· Addresses all equipment needs and service, including maintenance contracts.

· Oversees POS maintenance, upgrades, and programming.

· Manages cash request and change orders in coordination with finance.

· Monitors concessions inspections to ensure safety, cleanliness, and sanitation. Implements internal audit processes.

· Manages layout and execution for all events outside the complex.

· Serves as Manager on Duty as designated.

· Actively assists in Company events and new ventures as directed by supervisor.

· Develops, maintains, and ensures compliance with Company policies and procedures.

· Follows all Company directed guidelines on energy conservation and practices conserving energy with all business aspects at PMI.

· Responsible for following, observing, and participating in all Company related safety programs, procedures, and training as well as reporting potentially unsafe conditions.

· Maintains knowledge of new developments and trends in the field related to job responsibilities by attending educational programs, seminars, and other job-related courses.

· Track fixed assets for the purpose of financial accounting, preventative maintenance, theft, or loss.

· Perform as the liaison between Purchaser and Vice President to maintain product quality and quantity.

Knowledge, Skills and Abilities Required:

· Knowledge of food and beverage management at a level normally acquired through completion of an associate degree in hospitality management or related field.

· A minimum of 1-2 years supervisory experience.

· Minimum of 3-5 years Food & Beverage experience required.

· Strong organizational abilities to ensure that projects are completed to required specifications and according to established deadlines.

· Ability to work well under pressure.

· Excellent interpersonal and communication skills required for directing the work of part-time employees and working with high level clients and patrons.

· Analytical skills necessary to determine appropriate supply levels for catered events.

· Ability to pay close attention to detail and accuracy.

· Previous experience utilizing programs such as Microsoft Office.

· Forklift experience is a plus.

Other Expectations:

· Frequent mobility and/or sitting, standing, bending, or reaching for extensive periods of time.

· Must be able to operate personal computer and other standard office equipment such as fax, copy machine, calculator, telephone, etc.

· Must be familiar with a variety of standard equipment to be used in the preparation of food such as ovens, fryers, grills, etc.

· Requires eye-hand coordination and sufficient manual and finger dexterity and full range of body motion for handling and lifting items weighing up to 50 pounds.

· Normal range of hearing required plus vision correctable to 20/20 to read reports, communications, and computer terminals.

· Employee will be required to work several consecutive days. Work schedules may frequently include workdays of 10-14 hours.

· Required to workdays, evenings, weekends, and holidays as dictated by event schedule.
