Sushi Chef Job at Negroni
Join our first West Coast location! Negroni is hiring experienced staff for our first restaurant in Los Angeles located in the West Hollywood/Fairfax district.
Our ideal candidates are those who will assist in carrying our culture, standards of service, and quality of food to the new location. While experience is preferable, individuals with a passion for people, food, wine, and service are welcome to apply.
Must be avaiable to work nights, weekends, and holidaysSushi Chef responsibilities include but not limited to handling a wide range of raw seafood and other ingredients, managing inventory, and working with an attention to detail to fulfill all orders within quality standards. Able to regulate staff on quality control and flavor profiles as well as execution in a timely manner.
- Preparation of all types of sushi, including maki, nigiri and sashimi
- Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango, and carrots)
- Understanding of complex flavors, and proper prep techniques regarding in house sauces specific to maki rolls.
- Manage food prep activities, and the ability to train, motivate and educate staff daily
- Coordinate with our wait staff to ensure proper preparation, considering special requests and allergens
- Assiting with daily maintenance of cold line production within Sushi Station
- Monitor on hand inventory and coordinate the placing of orders versus pars
- Ability and skills to maintain and elevate program within company values and goals
- Uphold cleanliness of stations in line with company and local health department standards
