Description:

Sous Chef is responsible for providing three healthy meals daily and snacks to adult clients of Windmill Wellness Ranch L.L.C. Sous Chef will follow the approved menu designated by a licensed dietician. Sous Chef Responsible for ordering, planning, budgeting and oversight of kitchen. Sous Chef will work in collaboration with staff to ensure quality of meals provided to clients meets WWR expectations.

Responsibilities:

  • Storage and disposal of food.

o Sous Chef is responsible for ordering, managing and inventory on storage of food, both incoming stock and leftovers.

o Sous Chef will follow budget set forth by Controller, CEO or CFO.

o Sous Chef will often assist in unloading delivery trucks (call maintenance for heavy stock) and ensuring that food is stored in the appropriate conditions.

o After food service, the Sous Chef is responsible for determining if leftovers of either prepared or partially prepared food can be reused for same day meals or if they must be disposed of.

  • Testing Recipes.

o Sous Chef is responsible for trying and testing new recipes.

  • Recording Supply Use.

o Sous Chef will be asked to keep track of what supplies they use to aid in re-ordering supplies as necessary or delegate responsibilities to line cook.

  • Clean and prepare cooking station.

o The Sous Chef will be responsible for his or her own station, ensuring that all items are appropriately cleaned and ready for use before and after each shift.

o During foodservice, the Sous Chef and or Assistant Cook are responsible for keeping the station in working order and fully stocked.

  • Food preparation

o Sous Chef required to provide meals shall provide wholesome, well-balanced meals from a menu developed and approved in writing by a licensed or registered dietitian. Sous Chef is required to maintain the week’s meal menu posted in the dining area at all times.

o The Sous Chef is responsible for preparing items prior to a meal service, such as chopping vegetables, butchering meat, or cleaning seafood.

  • Maintain Sanitation Standards.

o The Sous Chef is responsible for ensuring that the kitchen meets sanitation standards as set by the state of Texas and local regulatory bodies i.e. the annual kitchen health inspection by the applicable local health authority or the department, as required under §448.415 of title 25 (relating to Food and Nutrition Standards) and Joint Commission standards.

o Maintain documentation of a passing kitchen health inspection.

Sous Chef shall be credentialed in food preparation in the safe preparation, storage, handling, and/or service of food to prevent food-borne illnesses,

o Temperatures of fridge will be taken in the morning and evening.

o Kitchen will be cleaned daily

o Once per week with help from maintenance all racks will be moved to deep clean kitchen

o Assure that the floor is clean to avoid any slips and/ or falls.

Job Type: Full-time

Pay: $20.00 - $22.00 per hour
