Prioritize and complete prep in order of need by grill.

Prep and stock remaining kitchen to ensure rush readiness.

Prep all products according to approved procedures and recipe specs.

Use scale when weight measure; use portioning tool when volume measure.

Ensure Consistency and quality products, proper yields and food cost control.

Follow prep recipes for preparing or portioning all products.

Prep products to levels as directed by manager.

Maintain clean and sanitized prep area.

Assist others online as needed to maintain speed of production for guest service.

Memorize placement/storage of all products in storage rooms and online.

Put appropriate portioning tools in product when stocking the line.

Store following appropriate hierarchies for ready to eat, prepped and portioned products.

Record completed items and number on Prep Chart.

Complete Pull/Thaw to levels as directed by the MOD to ensure properly thawed products.

Inform manager of any product that is low

Clean and sanitize counter, sinks, shelves and walls in prep area. Wash and put away all knives, bowls, utensils and scale. Send can opener through dish machine.

Clean, rinse, sanitize and store slicer and cutting boards.

Straighten, wipe down all walk in shelves. Remove and break down all unnecessary boxes.

Clean underneath all room shelves (protected/packaged product may be saved).

Sweep and mop floor in prep area.

Sweep walk in freezer floor. Remove and break down all unnecessary.
