Job Summary
We are seeking a dedicated and passionate Executive Chef with a la carte experience with banquets to join our exceptional team at a competitive pay rate (70-80k/Yr DOE) plus incentive plan and benefits (PTO, Vacation, Holiday and Health Insurance) for Full-Time associates.
The Executive Chef’s responsibilities include but are not limited to coordinating, supervising and directing all aspects of the hotel’s food production while maintaining profitable F&B operations and high quality products and service levels. The Executive Chef is expected to provide training for all staff, meet corporate quality standards, establish and enforce food specifications, portion control, recipes and sanitation. The Executive Chef is also responsible for controlling food and labor costs while maximizing guest satisfaction.
Essential Functions
- Plans and coordinates all food items prepared for hotel guests and banquets
- Manages day to day operations and assignments of the kitchen staff
- Communicates goals as well as assigning and prioritizing work.
- Ensures all staff are properly trained and have the tools and equipment needed to effectively carry out their job functions
- Ensures that all menu items are prepared and presented according to established recipes as well as the hotel and company standards.
- Develops menu design and concepts for all food and/or bar outlets and catering events
- Maintains procedures to ensure security and proper storage of food and beverages, kitchen inventory and equipment
- Replenishes supplies, inventory, uniforms etc.
- Minimizes waste and pilferage
- Ensures that all kitchen equipment is in proper condition and cleaned on a regular basis
- Ensures that all kitchen areas are cleaned, mopped, and properly stocked according to anticipated business volume and in accordance with sanitation and health department requirements
- Attends all managers meetings (Weekly, BEO, Morning Stand Up etc.).
- Maintains continued communications with guests who have complaints or concerns
- Motivates, coaches, counsels, reviews and disciplines all Food and Beverage Department managers and associates
- Fairly assesses and evaluates any direct reports performance
- Complies with attendance rules and is available to work on a regular basis.
- Performs any other job related duties as assigned.
Job Requirements
- At least 5 years of progressive experience in a hotel or a related field; or a 2 year degree (Culinary) and 3 or more years of related experience; or a 4 year degree and at least 1 year of related experience.
- Previous supervisor responsibility is required.
- Must have knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations.
