Job Summary
Consistent with Memorial Hospital and Health Care Center healing mission and core values, the Cook supports the goal of providing quality food in a wholesome, sanitary manner for customers of all groups, including newborn to geriatrics. Prepares meals which are palatable and is aware of importance of food presentation in relation to patient satisfaction and compliance to dietary modifications.

Qualifications
Education:
High School Diploma or equivalent preferred, but not required.
Training:
Two to four days of training required for the position, depending on previous experience.
Experience:
Two to three years cook experience preferred. However, will promote from within, if employee has demonstrated ability to perform all tasks required for cook's position.
Job Knowledge, Skills, and Abilities:
Ability to prepare meals using short order cooking methods, batch cooking and presents food with focus on eye appeal and appropriate food handling protocols. Understanding of operating all equipment involved with food preparation. Must be able to work quickly and efficiently in a semi-structured work environment while maintaining an orderly environment. The ability to interact and communicate, be a team player, and have excellent customer service skills in accordance with our mission when dealing with patients, guests, hospital staff, and fellow dietary employees.



Performance Requirements
Responsible For:
Overall coordination and preparation of all food for assigned area: patients meals, employees and customers visiting the cafeteria, internal and external guests for special catering functions. Responsible for recording internal food temperatures and keeps accurate records. Assumes a lead role in the area of food preparation and is able to make decisions on quality of foods served and appropriate action needed. Responsible for projection of production needs and ensures food waste is kept to a minimum.
Physical Demands:
Employee must be able to reach, grasp, circular motions of wrists and shoulders, finger/manual dexterity, fine motor skills, bend, stand, stoop, kneel, and lift 50 pounds with assistance. Ability to stand or walk most of the day. Ability to see, read, and write. Works in a well-lighted, noisy, often warm area.
Special Demands:
Must be able to read, follow recipes, and knowledgeable with diet modifications. Ability to work under a great deal of pressure in meeting meal deadlines. Previous knowledge of experimental foods desired. Reflects the mission, philosophy, core values, and customer service plan of Memorial Hospital and Health Care Center in action and attitude.

Safe Food Handling (25%)
  • Employee knows and adheres to safe food handling practices
  • Follows principles for Personal Hygiene, Time and Temperature Control and Cross Contamination.
  • Follows proper hand washing techniques and washes hands at appropriate times
  • Records internal food temperatures of food items during process of preparation and chilling. Records internal temperatures of each batch of food prepared.
  • Keeps walk in coolers and freezers clean and orderly by discarding expired items and emptying boxes.
  • Covers, labels, and dates all food items per policy.
Food Preparation and Quality (30%)
  • Prepares meals in a clean, safe, sanitary manner following standardized recipes to ensure presentation, wholesomeness, and a high quality product consistently.
  • Uses proper portion control utensils for cost control.
  • Assists Supervisor with all special catering functions and presentation is excellent.
  • Employee uses short order cooking method or batch cooking to prepare fresh, high quality food items.
  • Foods are not prepared too far ahead of service.

Interaction with Team (25%)
  • Expected to Work closely with Starter, Expeditor and Room Service Specialist for efficient flow in meal delivery process.
  • Assists with Room Service delivery time of forty-five minutes to meet patient and visitor expectations.
  • Accepts constructive criticism for any food item which does not look attractive and replaces items needed

Diet Modifications (10%)
  • Familiar with reading and understanding diet requisitions in regards to nutrition therapy and our diet manual.
  • Responsible to ensure tray is accurate specifically for diets, allergies and special notes related to patient and guest satisfaction.
  • Aware of and demonstrates proper protocol for weekend coverage, what is to be reported to the covering R.D and procedure for paging if assistance is needed.

Cafeteria Procedures (10%)
  • Exhibits good customer service skills to all customers visiting the café.
  • Accurately uses the cash register by using one's own server number and password.
  • Follows procedure for all media charges with few voids and balanced cash drawer.
  • Prepares food items for deli case in a marketable fashion which promotes sales.
  • Seeks ways to use perishable food items prior to expiration.
  • Serves customers quickly and pleasantly in the café and does not leave line between 11am-1 pm.
  • Cafeteria is stocked at appropriate peak times and at the end of the day.
