SUMMARY
The Baker is accountable for the quality and consistency of all pastry products produced and served including the efficiencies and consistency. The Baker works directly with the Banquet Sous Chef on the creation, development and implementation of new desserts and creative menu developments of all Casino restaurants.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

  • Demonstrates hands on approach to all bakery products produced.
  • Insuring quality, presentation and consistency standards meet company standards.
  • Assist with the development of standardized recipes for all menu items. Ensures that recipes are accurate and updated as needed.
  • Ensures that all food products prepared meet the established specifications and standards.
  • Ensures proper levels of bakery and pastry items are prepared based on forecasted needs and their prompt delivery to the designated outlet for guest consumption.
  • Responsible for complete set up, cleanliness and organization of the Pastry Department and bakery areas at all kitchen locations.
  • Seeks to maintain knowledge of industry trends in the world of pastry and baking.
  • Bake fresh pastries, desserts and breads for all Gaming/Hotel outlets.
  • Maintain a good relation with all culinary team members and other departments.
  • Recommends measures to improve production/service methods, equipment performance,
  • Takes responsibility to know, understand and comply with established company and departmental policies and procedures.
  • Responsible for fulfilling kitchen food inventories.
  • Assess customers’ needs and preferences and make recommendations
  • Demonstrates a high degree of approachability to guest and shows special recognition of frequent guests.
  • Maintains constant awareness of services, promotions, and events offered by Shoshone-Bannock Gaming/Hotel and informs guests.
  • Quick to recognize guest dissatisfaction and attempts to remedy the situation.
  • Cooperate and communicates with fellow Team Members in all departments and always strives for mutual respect.
  • Must be able to work both independently and dependently as a member of a team
  • Excellent verbal, written and interpersonal communication skills.
  • Strong attention to detail, the ability to multitask, and must possess strong communication skills.

QUALIFICATION REQUIREMENTS

CERTIFICATES, LICENSE, AND REGISTRATIONS
  • Must be able to submit supporting documents of education and training (High School Diploma, GED, Degree and Certificates) to support qualifications.
  • Must be able to obtain and maintain a gaming license in good standing according to the licensing rules and regulations when applicable.
  • Must be able to obtain and maintain in good standing a Driver’s License and qualify for Fleet Management coverage on company vehicles.

EDUCATION AND/OR EXPERIENCE
  • High school diploma or GED required with a minimum of two (2) years’ experience in Pastry & Bakery production (G7)
  • Associates Degree in Culinary Arts/Pastry Arts with five (5) years’ experience in Food & Beverage. Certified Pastry Culinarian, Certified Working Pastry Chef , or Certified Executive Pastry Chef (G8)
  • Bachelors’ degree in Hospitality, Culinary Arts, or Business Management with six (6) years’ experience in Food & Beverage Management. Must have Certification in Pastry Culinarian, Working Pastry Chef, or Executive Pastry Chef

SPECIAL QUALIFICATIONS:
Strong organizational skills required.

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

Ability to apply commonsense, understanding to carry out instructions furnished in written, oral or diagram form. Ability to deal with problems involving several concrete variables. Must be able to communicate effectively in person, while on the phone, while using intercom/microphone, and in writing.
